Step 1: The extracted product is taken to the shellfish room.
Step 2: It is checked that it reaches the minimum size stipulated by the Xunta de Galicia (this control is also carried out in the product extraction area).
Step 3: It is labeled with the number of the sailor/shellfisherman who made the catch, the day of capture or date of freshness, the name of the species and the extraction area.
Step 4: Select by size.
Step 5: The cockles remain in nets until the auction, the other bivalves in boxes and the hedgehogs in baskets. The auction of hedgehogs, razor clams and longueirón begins at 3:30 p.m. and the auction of the rest of the bivalves at 4:00 p.m.
Step 6: The person in charge directs the auction from a computer connected to a screen, where the species that are going to be auctioned appear at all times; initially setting a high starting price that drops until a buyer stops with a custom command.
